on the daily, weekly and monthly basis to maximize profitability. Generate and present complete and accurate
business reports and forecasts. Hire, train, supervise and evaluate a diverse staff base of 50 individuals.
Schedule staff and coordinate workloads. Plan marketing and promotions. Ensure food and beverage quality,
presentation and sanitation to meet exacting standards. Engage in delivering superior customer service via
floor presence. Manage inventory and purchasing. Oversee compliance with all relevant laws, standards, and

Restaurant Consultant
Self employed - Greensboro, NC - October 2012 to June 2016
Consulted with several restaurant Owners and Managers on the concept, design, and financial aspects of new
restaurants between 2012 and menus and helped update them. Suggested long-range
business employee management strategies. Advised management on how to cut costs and
improve service. Performed kitchen manager duties and designed menu and kitchen for restaurant.
Brought new food suppliers to lower the cost and assisted in food menu creation.

Charged with full P&L responsibility. Managed all aspects of marketing and events. Acting Executive Chef for
the kitchen with two sous chefs helping to supervise.

Cubbie's Restaurants - Wilmington, NC - 2005 to 2010
Owner/Managing Partner in two Cubbie's restaurant franchises in Wilmington, Responsible for all
operations, scheduling, P&L, and training of new staff. inventory cost controls and building sales through
cooperative marketing. Have retained a 98 or higher sanitation score on both restaurants since opening.
In-flight catering service for private and corporate jets out of ILM airport. Work closely with Air Chef, a national
luxury flight catering company, fulfill all local orders in a timely fashion, and provide gourmet meals and sundry
requests such as alcohol, newspapers, local restaurant fare other than ours. This is an on-call service we
provided just for Air Chef and their partners.
